How to Shuck Oysters
Place the oyster flat side up on a firm surface.
Push the point of the knife into the edge (at 2 oclock) of the flat shell until it hits the bottom shell.
Pick up the oyster and twist the knife into the small hole you have made to pry the lid open slightly.
Slide the knife half way into the oyster and, holding the blade up against the flat shell, cut the muscle holding the top shell.
Remove the flat shell from its hinge. Rinse the oyster in the shell under running water.
Run the blade underneath the oyster cutting the remaining muscle and roll the oyster over.
This presents the oyster on its best side and enhances its appearance.
